Found some samples with this sampling, so in order to support it, JPEG2000 header cannot be used anymore, a this patch also adds the enums for each supported colorspace and sampling, avoiding hacks. Part-of: <https://gitlab.freedesktop.org/gstreamer/gstreamer/-/merge_requests/2641>
