This allows the simultanous use of multiple udpsrcs listening on different multicat addresses. Without this all udpsrcs will receive all packets from all subscribed multicast addresses. * What is UDP src/sink?

It is a set of element to transfer data using UDP, nothing more, nothing less.
Its main purpose is to be used in conjunction with RTP but they are kept as
separate elements because we can.
