avtp: Update documentation
- Mention that a new capability is required by "avtpsink" element; - Use "clockselect" element to change pipeline clock, instead of a gst-launch option that never saw the light of day. Part-of: <https://gitlab.freedesktop.org/gstreamer/gst-plugins-bad/-/merge_requests/1443>
